    Really hearty soup - great taste, with just a few simple ingredients & quick prep time. I used 1 head of escarole instead of the rabe (only b/c I was unfamiliar w/ rabe. Loved the technique of mashing 1/2 the beans before adding, really makes a difference in the texture. I had leftover sweet sausage links that I had already parboiled, so I just sliced them & cooked them that way. Go easy on the salt, I added probably a bit too much for my liking, so I skipped the grated cheese at serving time. A keeper!

    Made this recipe for my family using fresh sweet parmagiano and brocollia rabe sausage.c They all raved about it and took left overs home. could not have been happier with the results and it was easy!

    This soup is a family favorite. I've been making it for years. When I can't find the rabe I use lots of spinach or frozen baby broccoli florets. I might try kale next time. I've also added vegetables I happened to have on hand, like turnips, to the soup. Turned out great.

    The flavor of this soup is great!!! Not enough beans though. Add more beans. Don't add salt until you add the stock. Very easy to make in a hurry. Great with bread for dipping. Used Escarole instead of BR. Loved it.

    I have been making this soup since I came across your recipe and I absolutely love it. It is very filling. Sometimes I use spinach instead of broccoli rabe but it is always a fast , easy and delicious soup to make.

    I have made this soup many times to the point where I have the recipe memorized. Some days I use broccoli rabe and sometimes escarole. I will try kale the next time. I am very much a soup person so it doesn't matter to me what time of year it is...it could be summer and I'll still make it if it suits my cravings! Definitely "Yummo!".

    Though the soup can be done in 30 minutes, I simmered it a bit longer the second time I made the recipe and feel it added a nice depth of flavor. I followed the recipe exactly the first time, except used kale, and it was a great soup. However, the second time I made it, I preessed my garlic cloves, grated the potato and carrot (which improved the creaminess, I think, and added 1 cup of white wine and some grated parm cheese while the soup simmered. Many of the soups I enjoy have a wine addition, and I think this soup tastes better with the wine added too. I will make this soup again, and as one reviewer said, this soup gives one the chance to experiment according to one's taste. Yummm.
