Ingredients

  • 2 tablespoons butter
  • 1 large shallot, very thinly sliced
  • 8 eggs
  • Salt and freshly ground black pepper
  • 1 package soft herb-flavored cheese, crumbled (recommended: Boursin)
  • 1 cup green peas

Directions

Melt butter in a medium skillet over medium heat. Add shallots and cook 3 to 4 minutes. Whisk eggs with salt and pepper and combine with shallots then stir in the cheese and peas, cook 3 to 4 minutes until eggs are firming up but not yet dry. Serve immediately.

    I used only 6 eggs and still had leftover's for a family of 4 (I also cooked some whole wheat pancakes to go along with it. I only had extra sharp cheddar cheese so I grated about 1 C. and could have used less since it has such a strong flavor. I wasn't sure how much to use since the recipe doesn't call for an amount. No shallots on hand so I diced about a Tablespoon of yellow onion and 1 green onion and sauteed that. I also substituted some frozen spinach for the peas. My husband and I loved it, but the kids did not. Their loss...our gain. LOL I'm looking forward to trying it will peas next time.

    I wanted to do something different with eggs other than the usual fare and found this recipe. I didn't have an herb-flavored cheese so I put in a little bit of shredded mozzarella. OMG! Even with the change in cheese, this tastes so good. As another reviewer stated, who would think that adding peas would taste good. Well it does!!
    I would definitely make this again. Thanks Rachael.
