This is an easy and very tasty recipe. Made this today for dinner - took me 30 minutes, tops. Was GREAT. Whole family including 3 children 10 and under loved it. I used only 1/4 onion because more would have turned the kids off. Otherwise - this one's a keeper.

I liked the poaching method, the chicken was tender; however, the sauce was only mediocre. I thought it was hot but bland at the same time. It reminded me of spicy ketchup. Also, we only used 1/2 a can of beer and I thought it was too strong (I am not a fan of beer in the first place.

This is one of my all-time favorite recipes. It's definitely a "go-to" in our house and has been made for many friends and family, who always rave about it for days! I don't use the garlic, onions, or pickles on my sandwich and typically will swap out regular Tabasco for the Chipotle flavor, which adds a little smokiness to the dish. I make a simple homemade guacamole using avocados, lemon juice, and garlic salt to put on top of the sandwiches...it does a great job of cutting the heat slightly and adds wonderful flavor! Just thinking about this delicious meal is making me hungry!

I made this today for me and my hubby. The chicken took longer to cook, but it was delicious! I will make it again.

My husband and kids weren't too crazy about this recipe. The only one I could get to finish it was my 2 year old! I thought the seasoning blend created sort of a "bitter" after-taste. Normally, I'm a big fan of Rachel Ray's, but this wasn't a recipe that I'd try again.

This was an excellent meal, even my son that won't eat anything had two helpings of this. Will be eating again!

This was pretty good! When I tasted the chicken mixture on it's own, I was a little hesitant, but when you add the pickles, MMMMMMM yummm! I am a new fan of that mix of pickles. It was definitely too spicy for us, so next time we'll cut down to about half of the tabasco, even my husband, a fan of spicy, said it was too much! I had some precooked chicken strips from Costco, so I just shredded those, boiled the stock and beer separately, followed the rest of the directions, and it was so easy. Literally a 30 minute meal! I will be making this again.

Best recipe ever!! We have made this recipe about 10 times and it turns out great every time. If you like things spicy add a little more hot sauce. We always opt out of the pickles and make our own easy slaw and toast up our bread, it adds a little crunch. If you don't have any Mexican beer use regular, not too much of a difference in taste.

Made it and the kids thought it was too spicy so I will cut the hot sauce in half for them (and add my own to my sandwich. I added a bottle of our family favorite bbq sauce to give it a bit of smokey bbq flavor and that put it over the top. If you make this keep the basic recipe and add your own bbq sauce at the end...give it a try.
