    My husband said this was the best meatloaf he's ever had!

    I'm not a meat eater, but it smelled so good I actually had to taste it, and it was good!

    I hate meatloaf, but thought this just be the way to make it GOOD, and it was. My whole family loved it, and the left overs the next day were even better. Thanks Rachael.

    I only made the meatloaf on this - and substituted a toasted lite english muffin crumbled up for the bread crumbs, and skipped the pine nuts and raisins. My husband loved it so much he told his boss about it, and they asked me for the recipe!

    I tried this recipe just from memory but used ground beef mixed with italian sausage, currants instead of raisins, and I forgot the pine nuts.
    For the filing I used provolone, cappicola instead of prosciutto, chopped mushrooms and arugula and baked it for 30 minutes at 375 degrees. I normally make a pretty good meatloaf but this one was phenomenal!!
    The currants added a nice sweet addition but I'm going to try it again with the pine nuts because I think it would add to the taste.

    I did not like the pasta but loved the meat loaf. Serve with smashed sweet potatoes and a tomatoe salad.

    It was sooo good. I did leave out the raisins though and 20 minutes was perfect for my meatloaf. Maybe mine was thinner then the other peoples

    This is so good, expensive to make, but well worth it. Fixed it for my son and daughter-in law and it became one of their favorites.
