    I made my own meatloaf recipe instead of using hers & did not do the pasta part (mashed potatoes were better but the idea of the rolled up meatloaf is excellent & putting arugula inside was a nice addition. It takes WAY longer than 20 minutes in the oven so be warned! 30 minute meals is ALWAYS a bit of a stretch.

    I used ground turkey and put the prosciutto in the food processor to shred it so the meatloaf would be easier to cut. I also left out the raisins and nuts. I must say I was surprised it was as good as it was. Between two of us we almost devoured it in one night! I don't think I will ever make regular meatloaf ever again after having this one.

    This is one of my favorite meals to serve company, because I can make it the day before and reheat it. I bake the meatloaf for 25-30 minutes and often use a little less spinach, prosciutto and provelone than called for, as it tends to overflow a bit. After it cools, I wrap it in foil and refrigerate overnight. Before serving, I let it come to room temp (it takes a few hours, then reheat in a 300 degree oven for 45 minutes, then lower the temp to 170 to keep warm. I think it tastes even better the next day. I do not make the pasta that accompanies this recipe, instead I make Rachael's version of penne alla vodka, which is an excellent, colorful side dish. Even my picky Italian father loves this meal.

    The Meatloaf Brasciole was a hit with my family. It was moist and full of flavor! The different combination of textures (the cheese, proscuitto, spinach made it taste amazing! I am definitely making this again!
