    This was outstanding!! Looks like gourmet and tastes even better!
    Make sure to use parchment paper or non-stick foil to cook it on. The cheese stuck to regular foil.

    The meatloaf was so easy to make and tasted soooo good! I wasn't sure I liked the prosciuto in this recipe...I may try regular thin sliced ham. Overall....so good, easy to make, and my guests were very impressed!

    This is my husband's favorite recipe. It's amazing how quickly this cooks up. I really like the sweetness of the raisins in the meat, since it is otherwise so savory. I think I'll even add a bit more raisins than Rachael suggests next time.

    My Italian husband and I made this version of brasciole because we can never get the beef tender in the "real" version. We omitted the raisins and did not use veal, but the result was an incredibly delicious and colorful roll, which we used as leftovers in "meatloaf" sandwiches the next day. This is a terrific, easy, quick recipe, and we had everything in the pantry/fridge except the ground meat. We did not try the pasta.

    I made a switch to ground turkey to lower the fat, but otherwise followed the recipe. The cookie sheet trick is brilliant and the results were very good. We will be making this again.

    I loved this recipe. It's a very different way to eat meatloaf, and so pretty. I loved it prepared exactly as the recipe called for. However, my parents thought that it wasn't done enough because the meat was very moist. Depending upon your tastes, you may want to cook it longer than 20 minutes.

    As a Mother's Day gift, our married daughter fixed dinner. The brasciole was wonderful! Her father loved it so much, he asked me to get the recipe!
