Finally posting my review! This is my favorite meatloaf and I've been making it for a few years. It's sophisticated and has a wonderful aroma. First time I made it, I said "I will do this from start to finish in 30 minutes or less" and I really did! The high temperature roasting with the meat coated with EVOO creates a brown crust yet leaves the meat and cheese inside perfect. I've used both arugula and spinach and both work. I follow the recipe. No one knows there are raisins inside!

The meatloaf was so easy and delicious, even without parmesan, which I forgot, I'm going to use bacon next time because my husband didn't like the prosciutto.

As it was plated up it definately looked impressive, I was concerned with under cooking it so I think I ended up with it a bit on the dry side. I'll try it again.

I used this recipe because I had some ricotta in the fridge and I didn't want it to go bad. It was sooo yummy! I also used tri-color rotini b/c it was all I had on hand. But what a pretty meal! The part that the recipe doesn't tell you that Rachel does on the show is to reserve just a ladle-full of hot water from your pasta and use it in the bottom of the bowl after you put the zest, thyme, and cheeses in- to melt them all together.
The one piece of advice for leftovers is to only use as many tomatoes when you initially make this as you dare to eat; then, refrigerate it, and the next day, cut more tomatoes in half, season with salt in a separate bowl, and add them fresh to your pasta! I'm making it again for a shower and I can't wait to see what everyone thinks!

OMGosh, this was such a great meal. I try out a lot of new recipes at church. I made a double of this one and there wasn't a morsel left! And, it truly was a 30 Minute Meal.
