    Sorry Rachael but this recipe did not do anything for me. It was okay but I was expecting it to have more flavor. To be quite honest my normal meatloaf taste just as good and less expenses. None of the stores in my area have meatloaf mix so I had to buy packages of ground veal, pork and beef separate. I used good Prosciutto that I purchased in Pennsylvania and it still did not help.

    I am going to try it again since I have extra meatloaf mix left over now. However I am going to see what would happen if I am more ingredients such as basil, extra garlic some oregano and maybe a sauce to go on top of it.

    Like I said it was not what I expected but I won't count it out just yet. I want another crack at it but this time put my own spin on it.

    I made this with ground turkey instead of meatloaf mix and it was great. So much better than plain old meatloaf.

    THis is so good. The raisins and nuts add great flavor and texture. I didn't have pinenuts so I used sunflower seeds, it worked great. This is such a great method, you can make this with ground chicken stuffed with ham and swiss. A million different ways, plus it looks impressive to serve at a dinner party, yet so easy!

    I never liked meatloaf until i tried this recipe. It was very very good and my picky eater of a husband loved it.. although i left out the argula. But yummo! I passed it on too!!!!!!!!

    I'm not really a fan of meatloaf but this is unlike any meatloaf I've ever had- and it is delicious! I can't find meatloaf mix around here so I used lean ground beef and pork. I bought lean pork and ground it myself because ground pork always is so fatty and I can control the fat that way. It was perfect. I also made the pasta dish and didn't find it to be bland at all. I thought the flavor was delicate and beautiful. The lemon made it light and a perfect accompaniment to the richness of the meatloaf. I did have to use regular broccoli because the broccolini at market was WAY past it's prime. But it still turned out great. This is a meal that is guest-worthy.

    I loved the meatloaf but my family said...make your own meatloaf we like it better. My 17 year old picked out the pine nuts, but I wouldn't change a thing. It was delicious. As far as the pasta goes, I would take the ricotta out of the fridge and let it get to room temperature. Adding it cold, I found cooled down the pasta dish too much.

    Although it took me more than 10 mins prep (more like 32 mins the finished product was "De-lish". The whole family loved it. My wife said "give it 20 stars!"
