    This is outrageous! I used my cuisanart panini maker to sear the meat. I overcooked alittle cuz cooks alot faster, but still so yummy! The rice came out perfect, and soooo easy to make. Thank you so much Rachael!

    I just happened to be watching today's show while planning my meals and saw the guacamole stacks. I was planning to make hamburgers that night and thought it would be the perfect side. They were simple yet delicious. They will be very good in the summer with farm fresh veggies. We put feta cheese over them. Also, the red onions make it...I would recommend them over regular white variety onions.

    First time we tried flank steak and it was absolutely delicious! It had great spices and it was very tender. However, we did marinade it longer than 10 minutes. The kids kept us busy until we were able to start cooking! The rice was the best part of the meal. It had so much flavor and a lot of kick. The only thing we can say is it tasted so good, that it didn't even need the shrimp. It was great on its own. Thanks Rachael for a great flank steak recipe that we will absolutely cook again for the whole family.

    I made as our Cinco de Maya meal. Everything cooked great in the amount of time suggested; however, the preparation and chopping time made this closer to an hour meal, not 30 minutes. I also did not stack my avocado and tomato, but chopped together with onion, lime and cilantro. My Mexican husband and all the children reallly enjoyed this dish.

    I kind of made the recipe my own but it turn out to be great!! I marinaded the steak in the seasonings plus a lil lime juice and I really didnt get the point of the guacamole stack so I chopped everything up and mixed it all together. It turn out to be great over the steak. It tasted so fresh and yummy! I would totally try this recipe again!
