Smashed Potatoes and Cream Cheese

Ingredients
  • 2 1/2 pounds small red potatoes or baby Yukon gold potatoes
  • 1/2 cup half-and-half or whole milk
  • 8 ounces plain cream cheese or veggie cream cheese, cut into pieces
  • 10 chives or 2 scallions, chopped or snipped with kitchen scissors
  • Salt and pepper
Directions

Boil potatoes until tender, 15 minutes. While the water boils and when the potatoes are cooking, you can be working on the meatloaf recipe.

When the potatoes are tender, drain them and return them to the hot pot to let them dry out a bit. Mash potatoes with half-and-half or milk using a potato masher. Add in the cream cheese and smash until the cheese melts into the potatoes. Then add chives and scallions and season with salt and pepper, to your taste.

So yummy!!! You really can't go wrong! Next time I will try the Garlic and Chive cream cheese as another reviewer mentioned. For those who are saying the potatoes are bland, really salt your potato water prior to boiling and you will not have to add as much salt, if any, at the end. item not reviewed by moderator and published
Fantastic. I've messed around with this a few times and have found that using garlic and chive cream cheese works great. I remove about half the potato skins before boiling simply because I think it makes the dish a little more creamy and a tad less "rustic." Awesomeness. I used Heavy Whipping Cream 1/4 cup and 1/4 of 2% milk because that is all I had....added 2 TBSP of butter and some cracked pepper to taste....turned out restaurant style. Love them! YUMMMMMY! Fatnng, but who cares. item not reviewed by moderator and published

I love this recipe and have been making it for a couple of years, but with a little twist. I substitue the regular cream cheese with onion and chive cream cheese. Dissapointing. This recipe was very bland. Potatoes made with butter & milk tastes better in my opinion. These potatoes didn't taste bad but just needs to be doctored up. I used the Yukon gold potatos and chives for this one. I made this for Thanksgiving and it has a good flavor. Once I had it on the table I added some butter and let it just slightly melt over it, served, and had the hubby and kids wanting seconds. This is one of our GO TO dishes, we never eat plain potatoes again. I change this up a lot, according to what I'm serving (like I add jalepenos and garlic if I'm doing a southwestern dish). I've probably reviewed this one before but I found a new use for the cream cheese/milk mixture and wanted to pass it on. Make a little extra and put it a container for later. It's great in scrambled eggs. For our family I use 8 eggs and a couple heaping tablespoons of the cream cheese mixtures. I only made 2 changes in these, I added 3 cloves of minced garlic & used 1/3 of a large onion minced (didn't have the green onions on hand) and I used soy milk instead of half & half. Ok I made 3 changes! The garlic was added because my husband likes them that way & I do too! The Yukon gold potatoes are perfect for this.
