adore this recipe. i use half deli turkey and substitute the other half with browned ground beef, a good balance of flavors. also, instead of using plain smoked turkey, i use either chipotle or cajun seasoned smoked deli turkey.eliminates the need for the chipotle pepper. my husband and i like a little hot but we especially like FLAVORful hot. i use 12-in. flour tortillas and since i add a little more tomato sauce and about a third more cabbage, i get 8 filled very nicely. i discovered recently that the mixture itself, since it is completely cooked, is very tasty by itself. i usually make a point of leaving a tiny bit out just for myself to have a few forkfuls of. it reminds me of taco salad filling, but with the crunch of raw cabbage. really quite good. i actually think it could be served that way over a handful of taco chips, which would make it a REALLY quick meal. it is one on my favorite rachel recipes, and i have quite a few that i make regularly. wonderful recipe. :

these are great! my family really enjoyed them, great thing about them is, you can make them in advance and freeze them, when you're ready to eat them warm them up in the oven! Delish!

I got the deli man to cut the turkey pretty thick (about 1/2" maybe? and ended up using nearly the whole bag of slaw. Which I felt was fantastic inside the chimis, even though I raised an eyebrow at first. I also had an opened can of chopped green chiles sitting around that I tossed in there. It made about 7 chimichangas, so we had plenty for leftovers. I baked them, flipped them, then baked again. My husband and I both thought they were fantastic and one of the easiest dinners I've made in awhile. It's going to be one of my staples. Who knew deli meat was the trick?!

The only thing I did differently was to skip the cabbage inside the chimi, but I served them with creamy cole slaw on top. The combination was excellent.

I found this recipe as one to clean out the fridge. It sounded borderline at best, but got good reviews, so I gave it a shot. I even apologized to my husband in advance for the weird dinner I was about to make. I made a few changes, based on what I had in the kitchen. I used red onion instead of scallions, 8" tortillas (secured them with toothpicks, and avocado slices for sour cream. I incorporated cilantro into the filling mixture and used two chiles (seeds wiped away. It was amazing - such a wonderful surprise! LOVED IT LOVED IT LOVED IT. My husband went back for thirds.
