    I found this recipe as one to clean out the fridge. It sounded borderline at best, but got good reviews, so I gave it a shot. I even apologized to my husband in advance for the weird dinner I was about to make. I made a few changes, based on what I had in the kitchen. I used red onion instead of scallions, 8" tortillas (secured them with toothpicks, and avocado slices for sour cream. I incorporated cilantro into the filling mixture and used two chiles (seeds wiped away. It was amazing - such a wonderful surprise! LOVED IT LOVED IT LOVED IT. My husband went back for thirds.

    I live in Texas where we have an abundance of places that make great Chimis, so I was skeprical. I mean, cabbage in a Chimichanga? These Chimis are so quick, easy to make and good tasting we make them all the time, and if I didn't know there was cabbage in there (and people I've made them for couldn't tell I'd never have known.

    This is my first review. but I had to say, this recipe is fantastic! My husband deep fries and smokes turkeys for the holidays, so I was looking for ways to use smoked turkey. I made a double batch and the firat night we pigged out, and the second night my husband went straight for the leftovers when he walked in the house after work! Thanks!

    THIS RECIPE IS GREAT. ITS SO EASY AND TAKES NO TIME. MY HUSBAND LOVES IT. I CANT STOP TELLING EVERYONE ABOUT IT.I TELL EVERYONE I KNOW.

    I was skeptical about preparing chimichangas this way, but they were excellent. Great way to get the crunch, but cut the fat. Try other fillings as well.

    My husband and I really enjoyed these. I followed some other reviewers' suggestions about wilting the cabbage slightly before making the filling, and I actually think I would have preferred it to be crunchier in the final product. I also mixed the cheese into the filling per some of the reviewers, and I think we would have preferred the cheese to be a more distinct element (think of a tuna melt... you don't mix the cheese into the tuna salad, you melt it on top. But these are small matters of personal preference. Next time I will try making it exacty as written.
