After watching this episode, I decided that this would be just the dish to prepare tonight for dinner. My husband LOVED it, as did I! Thanks to Rachael for making my life so my easier, and for this wonderfully delicious meal!

I have to admit I was wary of this recipe - I wasn't too sure about the deli turkey. But it looked so quick that I went for it, and I was very happily surprised! It was SO simple and SO delicious! The chipotles in adobe sauce added such great flavor - it really changed the taste from the standard mexican fare we have around my house. And it was so simple - I just stirred the shredded cheese into the filling mixture to make it even easier. My husband ate FOUR of them (I did use 8 inch wheat tortillas instead of 12 inch, so they were a bit smaller and he wanted another one but thought he might regret it later. Anyways, these really were delicious and they are definitely going into our regular rotation. One more note, I just cooked these in the oven at 400 for 20 minutes (seven 8-inch tortillas, we don't have a toaster oven...

This is the best dish I've tried. The kids all loved it and asked for seconds. My husband likes everything fried and this he loved not even realizing that it was good for him too. I can't gush enough. Great!!!

This was so delicious and so easy! We used Roast Beef instead of Turkey because of my husband, but I think it would be great with either. I'm so glad I found this show! It makes me seem like a good cook--and trust me, I'm not!

This was a very good meal, only problem I had was finding the chipoltes in the adobo sauce, had to use bottled chipolte sauce instead and it worked out fine. Just did not have the peppers cut up in the meal.
My husband liked it very much and he is usually picky and hesitant on trying new things.

I made these for my husband and a friend of his. I have never had chimichangas before, but they both had. Everyone loved these! I couldn't find the peppers in adobo sauce, so I just used hot peppers! Everything else I did the same! Yum!

This recipe is a keeper... My husband loved it too and the crispy tortilla shell is so good that you never miss the fried shell in a chimichanga. The only complain is that the tomato sauce I used was a little sweet, so the chimichanga was sweet, would have rather used a non-sweet sauce (be ware! I'll try a different tomato sauce next time, but definitely a keeper. They cook in no time in the toaster overn (mine only took 12 minutes to cook up!...
