    This stoup was great - I might even add another sweet potato next time. It was pretty spicy with two chipotles - if you like spicy, use two - if not, use one and no sauce from the can.

    Also, I like my potatos really cooked in soup, so instead of adding them later with the chicken, I added them first when sauteing the veggies. I think this is what Rachel did when she made it on TV - so that's what I did.
    Quesadillas were great - simple and tasty. And the stoup is so healthy! YUM!

    I made this supper for my husband and the rest of the crew at the fire station. I used 2 chilis and it was a little spicy, but the sour cream really helped tame the spice and add some creaminess. I also made the quesadillas to go with, they were easy and satisifying. They guys went on and on, it was a big hit.

    Healthy and fast. My family loved it. I made it with chipotle sauce, otherwise followed the recipe exactly.

    I'm not much of a cook, but when I saw that there were sweet potatoes in this soup, I had to try it! Mmmmmm....
    I also made some of the quesadillas to go with the soup, but use a little of the chipotle chili in adobo's sauce and a little canned green chiles.

    Rachel, you did it again! This is delicious. I did it with boneless skinless thighs and roasted them in the EVOO and then put them in with the veges after cooking them according to te recipe. This is a keeper and so easy. Janice, Montgomery, Tex.
