This receipe was really good! I added more to it though. White wine, onions, red bell pepper and garlic. I think next time I'm going to put more spice to it. It was really fun to make and it was so refreshing and light.

Maybe Rachael never actually tastes the recipes before she is given the OK to cook them, but these were terrible! The filling was not tasty and the peppers did not cook properly on the grill. I am going back to my own way of baking my stuffed peppers. Rachael.....not everything can be done on a grill!

I made these peppers exactly the way Rachael did on the show and in the recipe. The problem is that it's really not the best way to cook them. If you do want to make this dish, I suggest stuffing the peppers and baking them in the oven the way stuffed peppers are traditionally done. I also did not like the combo she used to stuff them and I would do it differently, adjusting the seasoning as well.

I made this with poblano peppers for my Guadalajaran grandmother. She took one bite and would eat no more. I have not been able to talk to her since and I think that she has written me out of her will. Nobody else really liked them either - but at least they are still talking to me. I now only make them chile rellenos.

This was a quick & easy recipe. Very tasty! I used poblano peppers b/c that was all I could find, but it worked out great and my family loved them!

I made this rice as a side dish to enchiladas. I left the peppers out and added cubed frozen carrots. The whole family liked it.
