I love this recipe and make it often. Everyone is always a little skeptical of the fresh vegetables on top, but a believers after the first taste. I only use one box of spinach, and probably not even a whole jar of the red peppers (I guess it depends on the size of the jar.

It was really good, even my kids (young ones loved it. I didn't do the salad part on the top. That seamed like over kill.

Sooooo good with veggie meat crumbles and green leaf lettuce instead of arugula, and no pepperoncinis! (We're not as big into hot as RR. And healthy, too. The night I mage it Husband said red sauce or no pizza, so I made a quick marinara for the crust and the whole thing was most delicious. The marinara just makes it more fusion, right? :

I made this and should have doubled it! My family loved it. They were only disappointed when there weren't enough left overs for the next day! It was easy to prepare and looked fantastic. I have 4 kids, (two under 3 and need great recipes like this to make for my family! Thanks Rachel!

OMG! I just got done making this pizza and it's the best pizza I've ever tasted! I bought pre-packaged pizza crust (like Boboli and after I drizzled it with EVOO, I sprinkled McCormick's Garlic with parsley powder on it instead of using oregano. I used Tyson roasted chicken strips to save time and sauteed them with butter, garlic, onion, grill seasoning, AND I added lemon juice and balsamic vinager. Out of the oven, I topped the pizza with romaine lettuce, more EVOO, more lemon juice, cucumbers, and green onions. If you need more flavor, use Greek salad dressing on the crust or on top. Fantastic!

The crust is perfectly done since you pre-bake it for 10 mins before putting on the toppings.
You don't really need 2 jars of the roasted red peppers though, a little too much on the toppings but otherwise it's a delicious combination of flavors!

This is a wonderful recipe that I will definitely make again! I forgot about the arugula on the top but it was still great. I also substituted the feta which I didn't have with asiago and it was delicious! It sort of reminded me more of a philly cheesesteak!
