    I only made the pork chops and sauce--very tasty. I added some cayenne pepper to the sauce for an added kick because I couldn't find chorizo and had to use smoked beef sausage that wasn't as spicy. The left over sauce and sausage will make great sandwiches for supper tonight!

    This was a great change to pork chops. I probably will make it spicer the next time though. My husband really liked it, declaring "another triumph, my dear". I only used 3 chops and had sauce left over. I added about 5 or so drops of hot sauce and mixed it in with scrambled eggs a couple of mornings later and that really kicked started the day.

    I was nervous about cooking this for my boyfriend- he is usually not a fan of red peppers. To my surprise, he loved this- even went back for seconds. This is a quick meal to prepare. I forgot to add the thyme to the mixture, but you couldn't even tell. I will keep this one in my recipe box!

    I broke my foot recently and because I have not been able to get around, I started to eat poorly. I looked up 30 minute meals in hopes of finding easy meals that would not be empty calories. This meal did not disappoint. It was easy to make and was delicious. I cut the rice recipe by 2/3rds and that was plenty of rice for two people and four pork chops. Thank you.

    This was the first time for me to try anything of Rachael Ray. The ingredients were a little expensive to buy at first but some of the things I will have for the next time I need them. My husband and I loved the chorizo. I thought it might be a bit too spicy for me but it wasn't...he loves it hot and I'm total opposite but this recipe was just right for both of us. The Manchego cheese was a little expensive but had a great flavor, our first try on this cheese. I notice it's made from sheep's milk and I was leary at first to try it but once I got over that...the taste made up for it. We're hooked on watching Rachael now!

    We watched today's show and it looked so good we went out and got the ingredients and made it tonight-it was so good! The combination of the chorizo and the peppers went well with the pork, and because the chops were thick they were so tender, and not overcooked which is easy to do with thin ones. We couldn't find the Manchego cheese for the rice so we used a nice sharp white cheddar and it was great. This is not the first 30 minute meal recipe we've tried-Rachel, we love your ideas-keep 'em coming,thanks!
