    I used Lamp loin chops. we eat lots of lamb so we were happy to try this... this was an amazing recipe. My husband was doubtful that he would like the spieces used but he loved it. I called it "the SHISH without the Kabob"...everything was fabulous. I cooked the veggie in less time so they were on the crunchy side YumO!!!!..the couscous was yummy with the mint. I am going to save this for my next dinner party...thanks Rachel

    Seriously....I've tried cooking lamb several ways and have never enjoyed the flavor. This was perfect...my toddlers even enjoyed it!

    I made this last night after watching Rachel make it this past week. I followed the recipe exactly as far as the spices, but I used chicken breasts and followed another writer's suggestion to use golden raisins, apricots & dried cherries. The flavors were incredible! I can't wait to have leftovers tonight. This is definitely company-worthy!

    Made this recipe and my family loved it. I was a little nervous about cooking lamb, but it was easy and turned out great! Thought I had couscous and then it turned out I didn't, so I made "mint brown rice" instead and it was excellent! Surprised myself!

    Being of Arab descent, I know my lamb, and my kabobs. This is nowhere near authentic, although I don't think that was her goal at all so I still give 4 stars. It surely makes a good dinner, I enjoyed it all, but it's not like the chopan kabob I can get from the Afghan place down the street from me, nor is it like what my parents aunts and uncles cook either.
    My favorite part of this meal though was the pepper onion and tomato saute, it tastes SO good and goes well with just about anything. Try stuffing a fajita with it.

    I used lamb loin chops instead of the rib chops because my local grocery store had a great deal on them. The flavors were wonderful. I may not cook my veggies quite as long next time, and cut way back on the amount. I had a ton of vegetables left over! The couscous is perfect for absorbing juices!! Will make again!
