This was Delicious! I omitted the bbq sauce and only made the meatloaf. I didn't have bell pepper on hand so I used 1 roasted red pepper from a jar. Also added some garlic to the meat. Served it with grilled zucchini. Will definitely make again!

This is the best meatloaf I've ever had. My family who hates meatloaf begs me to make it. It is a family fave.

Anyone who would post a public comment and say Rachael Ray is a pig and should be slapped, without substantiation, is delusional. Not only that, but if you think she should be slapped, then you should probably be arrested. I think comments here should refer to the recipes. There is no need or reason to attack the character of the recipe writer. What does that have to do with the outcome of the recipe?

To Sane that wrote: "Rachael Ray is a pig and should be slapped", 8-10-08. It would be nice to know why you would make a comment like that to someone you don't really know, and to refer to her as a "pig"....OMG what kind of person says that about a gal that's merely sharing her cooking. Folks like you continue to give New York a bad name. Good grief, if you don't like her why are you watching and bothering to comment? Apparently you're bored and have nothing better to do. Let's see you get in front of an audience and pull off what Rachael does daily, the sharing of her recipes and ideas to help others. I might add she does this with honesty and an obvious love for what she does.

I did not like this recipe & I usually enjoy Rachel Ray's recipes. It just wasn't that great, it was edible but through away what was left & will not make again. The sauce is flavorful but the meat isn't.

This is a great non-greasy meatloaf plus sauce which is a meal by itself.

I didn't follow this recipe exactly, but it still turned out very well:
? Instead of sweet sausage, I used 1lb of regular beef, and 1lb of spicy sausage.
? I sauted the veggies with some of the garlic designated for the sauce, but I don't know how much of a difference this made?I just thought the veggies needed some garlic lovin'.
? Also, I felt I had to use 1 whole egg and 1 egg white. The one egg didn't seem to get the meatloaf moist enough.
? I technically didn't use pancetta, I used 4 slices of regular bacon and it worked fine?basically the same thing, right?
? I cooked the meatloaf at 375 for 35 minutes instead of 425 for 18 minutes; covered loosely with foil for half the time. If you're using a meat thermometer, mine read 130 degrees when I removed the dish from the oven.
? I also did not use any b-b-q sauce. I just served it right out of the oven.
