    Simple and delicious! But a word of caution. My family and I all enjoy garlic. I particularly love incorporating raw (uncooked garlic into dressings and other dishes when possible. Because the garlic is uncooked in this recipe, it has a very potent flavor. I love it, but if you have someone in your household who is not such a fan, you may want to consider this.

    I love spinach AND artichokes, so knew this would be a winner! I did double the vinegar and added a touch of sugar (Splenda to the dressing.

    I made this last night with a roast and mashed potatoes and absolutely enjoyed it. Felt like a healthy addition with the spinach, garlic, and lemon. Will try it next time with salmon!

    This is my favorite salad right now. It's fast, simple, and very tasty. Even leftover, the spinach wilts a little and it's still tasty. Be sure you follow the measurements, though, because it can be too lemony or too garlicky if you aren't careful.

    I had all these ingredients left over except the lemon peel, and it turned out great. I used Jane's Crazy Mixed Up Salt instead of the recommended salt and pepper, which has a nice garlicy edge. I also added avo slices to the leftover, as if the salad couldn't get any greener ; It wasn't the perfect addition but it added a nice creamy texture and mellowed the acidity. Overall I really liked it!
