    The stuffed mushrooms turned out surprisingly very good! I did bake them much longer than 5 to 6 minutes at the end, however. The tomato and bread salad was even better. It was simple and delicious, especially with some balsamic vinegar drizzled over it. I would make this again.

    Instead of the mayo & cream cheese version...this was very great change and more healthy for you. We even used the left over filling to put on a white pizza!

    Good recipe, but I missed the creaminess of a classic spinach artichoke dip, which this recipe reminded me of. Next time I'm going to try a different cheese other than the ricotta for the portobello topping.

    I love Rachel and have never put a bad review on-line in my life. But I felt compelled as this was inedible. The aluminum tent would have never cooked the egg in the stuffing, not to mention warming through the muck of the stuffing itself. It was tasteless, undercooked, the frozen spinach stringy and chewy... I literally spit it back into my plate. Ended up scraping off the stuffing to eat the mushrooms. I'm a good cook and this is the first Rachel recipe I've attempted, and the last. How can she boast about how delicious it is, referencing the artichoke dip that we all love. SO bad - so disappointed - never again a Rachel recipe after the way she went on about how yummy it was. Yuck, don't waste your time and money.

    I made the salsd the night I saw it. I added fresh cucumbers from my garden along with artichoke hearts and olives. My husband loved it, I will make it again!!
