This was yummy, easy to prepare and had an interesting (mint, healthful twist on pesto. I've made spinach pesto many times and only once have I attempted it with frozen spinach. Although I had COMPLETELY wrung out the moisture, the consistency just was not right; from then on, I have ONLT made spinach pesto with FRESH spinach. It is also MUCH easier, and less time consuming!! Good luck.
This recipe was quite delicious, and was a big hit!! I made a second dish, along with the chicken roll-ups also featured on this episode, and sent them home with my daughter so she'd have them throughout her busy week.

I love making all kinds of pestos. This one was really easy and FAST! I liked the fact that I could use less olive oil than in a normal pesto. I am also an artichoke freak..I put them in everything. I made it with Rachael's Spring Chicken Roll-ups (which are amazing as well BTW but could also be a great vegetarian meal by itself or even toss some grilled chicken bits in it for a quick weekday meal.
To the person who left the question asking about the frozen spinach... I personally don't think it would turn out the same. Even if you wrung the spinach out really well, I don't think it would blend right and the consistency would still be too runny to be considered a Pesto. JMHO. If you try it with the frozen spinach will you post back and let me know how it turned out?
