I made this dip for a get together and it was delicious. It was just the right amount of dip. I cut a bagette into slices and toasted it in the oven with olive oil. This was perfect for eating the dip. Some of the reviews said to use only one of the Spinach boxes, but I used both and found it to be the perfect ratio. I will definitely make this again!

Just with any receipt I will modify it to my taste. I will share with you some of my thoughts about working with Rachael Ray's Spinach Artichoke Dip. I actually believe it needs a little more pickup in the flavor. This is what I do to kick it up a bit.

It is ok to increase the chopped nions, definitely use chicken stock. You can use artichoke hearts in water or choose to use the artichoke hearts packed in olive oil and herbs. My preference is packed in olive oil, although what I made for the wedding was packed in water. My wife prefers for me to use the water packed artichoke hearts due to less calories. I really like spinach and if I error it will be in adding more than 2 (10-ounce boxes of spinach. I will probably go more toward 3 boxes of spinach. Seasonings are to taste, although I use the 2 teaspoons of dried thyme. You can also add along with the thyme to the olive oil, Red Pepper Flakes, Italian Seasoning Blend, and Black Pepper. Cooking the herbs in the oil helps extract more of their flavor. Choose a
white wine you like to drink. I add the cheese blend to the sauce when it starts to bubble, before adding the artichokes and spinach. This allows the cheese to blend in a bit better. I prefer more cheese then what Rachael recommends, although my wife prefers
for me to not increase the cheese, due to calories. After adding spinach and artichokes, add Kosher or Sea Salt and adjust the other seasonings to your taste.

    Enjoy your wonderful treat.

    Quick, easy, and wonderfully tasty!

I slimmed it down using non fat yogurt and low fat milk and it got rave reviews at a recent party. Also didn't have the wine but it still tasted great! I recommend halving the recipe too.

I made this for an office "Goodie Day" party, including my boss who is very health conscious. I used about double the artichokes that this called for and used fat-free half and half and think this came out amazing, as it got rave reviews!

This stovetop spinach and artichoke dip is simple and delicious. It's also quick and it tastes even better than the dip from the cafe down the street!

I halved the recipe and there was still extra. I plan to make it for my boyfriend's graduation party next weekend. I would suggest eating it with tortilla chips...I thought the bread was a little too heavy and made the dip taste bland. I also used Fat Free Half and Half and it came out with the perfect consistency. I think I will add a little bit more spice next time.
