This was the best. My 9 year old said it was delicious. I used chicken instead of the other types of meat. I had to use a little extra tomatoe sauce and extra spices to add flavor because it came out bland with chicken. After adding extra spices, garlic salt,garlic and onion power ,Basil and a little shredded chedder cheese for extra flavor, it's the best soup that I ever had. I also put tapatio sauce over the rice for extra flavor. Mild Taco bell sauce for the kids. My whole family loved it.

Watched this yesterday and happened to have all the ingredients on hand, except I used a can of whole San Marzano tomatoes and just squished them with my hands. Very good and filling. Really appreciated the tip on not adding the rice to the soup directly. Will make again.

First,lets address how great this Stoup is. As a lover of Stuffed Cabbage and Stuffed Cabbage Casserole, which also simplifies Stuffed Cabbage this was a had to make and it was fantastic.. Now lets addres this person from the South that is bent out of shape about Rachels weather comment. I saw this show,and I, like Rachel, am from Upstate NY and I have lived in NC for 16 years. When it was a record low of 12 degrees here the day I saw this show, my sister up North had 40 degress, yes I get damn cold down here when it drops to 50 or below, because your blood thins. Miss Southern Belle try a winter where 6 -12 inches of snow is a "dusting". That's why I moved to NC... get off your North/South horse and make the damn soup you will love it. END OF STORY

This recipe was fantastic and so easy. I substituted a pound of pork breakfast sausage since I had it on hand. Loved the rice on the top of the soup. Omitted the dill as it is not a fav in our family.

OMG! It is awesome! Quick and easy to make one pot meal. Toasting the rice in EVOO is something I was not familar with, but it is the way to go.

Saw the show featuring this recipe yesterday. I found it just as easy as Rachel made it look to prepare and just as fast. I increased the spices a bit, used regular cabbage and simmered for about 45 minutes (just long enough to get a fresh loaf of bread baked. Love this recipe, love Rachel, LOVE Food Network!

I too saw the show yesterday and it looked so good, I had to try it. Very quick, easy and incredibly delicious! Definitely makes a ton of servings : Serving the rice on top is the only way to go.

First, Justjay, who was offended because Rachael made a comment about the weather in the South dropping down to 50 degrees needs to get the chip off her shoulder. I, too, live in the South and yes it does get colder than 50 degrees, but so what?? Get a life!! The soup recipe was absolutely wonderful!!! Thanks, Rachel, this is one southern lady that will definitely continue watching you.

watching RR right now and she made fun of the south...how rude...we do get colder than 50 degrees....time to stop watching this show.
