I surpised my kids with this one, and they loved it! It goes well with a merlot.

We made both the Spanish Style Beef and Rice and this recipe on the same night, so we could skip ahead to the stuffed peppers. We didn't see the episode, so were a little unsure about exactly what to do -- the directions for prepping the peppers are a little unclear. We split them up one side and layed them open to fill them. We used Anaheims, as it was what we had on hand, and could have used more peppers -- at least 2 per person. Of course, we're feeding teenaged boys, so what can I say!

Flavor-wise, everybody liked it. I thought the spinach was a little odd with the flavors of the green chile and Spanish beef and rice, though no one else did. Husband wanted it a little spicier. Nobody thought the cloves were too strong, though, as some other reviewers have noted.

Lots of flavor. I didn't have leftover spanish rice so I bought Rice a Roni Spanish rice mix and ground beef.

This is the 1st recipe I've made from Rachael that I did not absolutely love. It was just not that inspired, and tasted just average, not great.

You can vary this recipe a million different ways. I stuffed yellow bell peppers, used Goya Adobo seasoning instead of cloves. Frozen leaf spinach, too, and it was great. Next time: peas. Leftover roast chicken instead of beef, or cubed, cooked pork. I've only made two of Rachael's recipes --this and the Salisbury steak-- and both were delicious. Thanks!

The peppers were wonderful!!!! I made yellow rice as a side dish instead of mixing it in w/ the beef. My family loved it. Thanks Rachael :

These peppers are very good. I make my husbands with beef but I do not eat beef so I make mine without any meat and they are still very tasty! I usually do not like spinach however in this dish it is really yummie! I certainly do not know how this dish can be made in 30 minutes for a busy household with 3 children so this meal from start to finish takes me about an hour. This one is a winner
