I made this dish many ways...exactly how Rachel has it, I have substituted apples for the apricots, dried cranberries, turkey sausage, etc...All have been very good. This recipe is really flexible. She also has you put the top on, however we have it open faced since it makes quite a bit of "stuffing". This recipe came from her low carb show so for all the people complaining about too much meat...well that's what it is! The thin pork cut can easliy get dried out so it's important not to overcook in the first process(should not be cooked all the way through! It will do this in the oven while you are making the rest and make sure you put it in the broth as she suggests until you are ready to serve it. I made the recipe as it for my relatives a few years ago and they are still talking about it.

I really love this recipe. It tastes delicious and is nice enough to double for company. Way to go, Rach!

Last night I was feeling like cooking somthing new so I found this recipe and almost didnt make it because I wasnt so sure about the apricot and my husband is a very picky eater, but i did make it and it turned out AWSOME my husband actually liked it so much he brought the leftover stuffing to work today even though the pork chops where gone. And the apricots go great, but i would like to try this same recipe with apples just to see how it comes out : thanks RAchel

I usually love every recipe from Rachel Ray, but this was a disaster. The meal was entirely meat and too dry. Overall, I cannot finish what I made. Waste of time and money.

Extremely easy, and I used spicy sausage which was a great complement to the stuffing. However, two pork chops is WAY too much for one person, so I just served it as a regular pork chop with the stuffing all over the top. I also grilled the pork while the stuffing cooked, so it was ready in about 15 minutes. Quick and yummy! I'll make this often.

This is truly awesome! A great dish to surprise the family with on a week night. After I sauteed the stuffing in the pan everyone was in the kitchen. No need to call the family to the table on this one! Thanks Rachel!

My family and I love this recipe. The 'stuffing' is such a hit, that I make it to put on biscuits for brunch....it's a new take on 'Sausage and Biscuits.'
