I've made these several times for family and friends, and everyone asks for the recipe.

I tried these recently. They are excellent. The thyme definately adds a lot to this recipe and I would not do with out it. Instead of the fresh thyme, I used 2 teaspoons dried thyme and it worked great. This was a great recipe and I plan on using it again- whole potato for 1 serving if using it as a main dish or 1/2 of a potato for 1 serving if using it as a side dish.

Everyone likes these potatoes. Full of flavor and cheesey. I did however make them with a blend of mozerella and cheddar cheese and I would definitely suggest not to forget the thyme (I did once by accident and it wasnt quite the same. They are very good and will continue making them. Thank you for the recipe.

These potatoes ROCK! Well worth the effort, as they are "delicious" and pleasing to my picky toddler as well!

Easy to do, fun, and tastes good. Should lend itself to other meats & herbs, too. But it took about 20 minutes in the micro to get the potatoes soft enough to scoop out.
