    I love Rachel Ray but this recipe was not very good. It did only take me 30 minutes to prepare but the eye round roast makes a terrible steak. The stuffing part was ok but not worth the work to do it as far as I'm concerned. I ended up taking the four pieces that were left after my husband and I ate the two steaks and put it in the oven for 3 hours with mushroom soup and then it was very good and tender.

    This recipe was great, but what really struck my family was that the filling alone could be made into a great side dish! Next time we need to bring a side dish for a party, we will be making up a ton of this spinach. It's super easy, and amazing.

    It was as easy to make as it appeared to be on TV and met all the expectationsI had after watching Rachel prepare it. The Eye Round was tender and the stuffing added great flavor.
    Definately a keeper.

    We cut the recipe in half for just the two of us, and actually didn't use the prosciutto at all to be a bit more health conscious, and LOVED it! Definitely a keeper.

    i wasn't sure about the steaks in the skillet. i've never done that before, but they were wonderful!! actually, they were a little dry, but that was my fault--i cooked them too long. the stuffing is fabulous--good enough to eat by itself!!!
