    I'm not sure what the others found difficult with this recipe. I made it for the first time last night and found it elegant to look at, easy to prepare and it was delicious. The stuffing was really REALLY good. It only took me 5-10 minutes to prepare the stuffing and get it into the roast. It would have taken less time but I bought spinach leaves and they weren't chopped fine enough. Next time I'll chop them really well and it should be a breeze.

    Recipe shown on the show looked awesome. However, I took and modified the recipe slightly. Instead of beef roast I used a pork roast and omitted the prosciutto. Then baked it whole. Tasted great.

    The stuffing was our favorite, meat was a little tough. I had a little difficulty stuffing the meat as quickly and easily as Rachel. I try in the oven next time. But it's definitely a repeat!
