I made these for Thanskgiving dinner and they were wonderful! If you are a purist, stop reading....

I used Idahoan instant mashed potatoes (they come in a carton at Sam's Club because they taste just like homemade to me. I used about 1 T of dried, minced onion and 1 T of dried parsley. I added the cream cheese, parsley, salt, pepper and onion to the water, butter and milk. When it all came to a bubble I stirred in the potato granules. My kids like to ate themselves silly on potatoes alone (and they "hate" onions!

I though the cornbread stuffing was aweful. The herbs overpowered the whole dish. The potatoes were great but too much onions..will definately omit the onions the next time.

My boyfriend told me that a fine restaraunt would sell this pork chop for 50 bucks. It was so easy to make and tasted SO good.

I've made this before and it was a huge hit and I'm about to make it again for company. I didn't bother "stuffing" the chops - just served alongside (I may make some pan fried apples as well. The stuffing taste great with some leftover cornbread made from Trader Joe's cornbread mix. And after tasting these potatoes, I always make my mashed potatoes with cream cheese. A good alternative to the onion is dried minced onion (about a tablespoon - just make sure to give it enought time to soften up in the pan.

I made this recipe, minus the peas. And it was a hugh hit at my house.
After frying the chops, I deglazed the pan with some Cranberry/Peach juice and made a gravy from it and let my family use it how they wanted. It was terrific.
The potatoes were gone in an instant.
