real good easy to make. one thing if your not gonna eat them all dont mix it together hard to keep leftovers.

I used cheddar cheese for the sauce, as that was what I had on hand. I didn't have all the ingredients on hand for the pico de gallo, so I used a can of tomatoes with chiles that I brightened with the cilantro and lime juice. The overall effect was still very simple and very tasty.

Awesome recipe. The cheese sauce was a little thick to my liking but I can adjust that.

Followed everything in the recipe. The cheese sauce was not smooth. Served this for a friend & hubby right on the kicked off time of a football game and the chips got soggy before the 1st quarter ended. I noticed our friend didnt really dig in that much, we got 3/4 of this food left on the dish & threw it out! I dont think anybody will like soggy nachos left over. Its not worth all my effort & not making this again!

The cheese sauce was really loose and never really thickened up. My husband didn't like it. We threw out half the nachos b/c they were so soggy. Melted cheese is much better. I wanted this to be good, but it wasn't.

The BEST nacho recipe! This is so simple and so delicious! I have had trouble with the cheese sauce, since the first time I made it though. This is one of my favorite go-to dinners for a small group of friends... especially a group of boys!

These are AMAZING!!! This is one of my favorite RR recipies! To make it even easier, if you have a Trader's near you, just use their Pico. Definitely stick with RR's cheese sauce though- delicioso!

Search no more. This is the best recipe for cheese sauce and beef/beans topping. I love black beans (kidney - yuck and the flavors of cumin and garlic....mmm. Use whatever salsa and guacamole recipe you like, but this cheese sauce is so creamy and thick, quick and easy. Really fun for the kids too.

Excellent over the top nachos.
I made some minor adjustment for my personal taste to reduce th4 heat:
- No jalapeno pepper on the meat sauce
- Replaced half the amount of pepper jack cheese with longhorn cheddar
- Home made bake chips
Otherwise I stuck to the recipe and really enjoyed the taste. I made the meat and beans as well as the pico de gallo ahead, making only the cheese sauce right before serving

These were great! Killer football food! The beef and beans mix was so good and a bit different from my usual taco meat. Give this a try and you won't be sorry!
