These nachos were great! You could probably omit the meat if you wanted and just use the spices with the black beans because they had a sort of meaty flavor and texture. I didn't have time to make the cheese sauce, so I just used shredded Monterey Jack on top of the meat, beans and chips. Placed them under the broiler just for a few minutes to melt the cheese and then added the pico de gallo. Delicious!

As I watched how Ms. Ray prepared the Super Nachos and the quantity that was available, I new that my guest would enjoy it while watching the game.

this was a great recipe for nachos. the cheese sauce was wonderful. There was the perfect amount of toppings to compliment the chips, and that never happens. This is a keeper!

The Cheese mixture wasn't as cheesy as I would like it to be... Other than that everything else was good. I would have rather just melt a good blend of cheeses on the top

made this for my girlfriend to show off my "culinary skills" and she loved it. Had a bit of trouble with the cheese sauce though. It made a ton! The spices are a great taco meat seasoning mix. And to think, I almost just bought a pack of taco bell seasoning to use. iMuy saborsa! Isnt Rachel just the hottest thing cooking??? No pun intended.

We've used this many times with several people over for dinner and made a nacho bar - it pleases EVERYONE. Kids and adults both love it because they can make the nachos the way THEY like them. We've had several people ask for the recipe and then take it home and made it for their families and their families ask for it over and over again. Thanks Rachael!
