I tried it and it's good but not great. There's too much going on. Nachos are a simple type of appetizer. I omit the meat and it's spices and use pinto beans. If you must season the beans, a little bit of cumin and sauteed onion is more than enough. I use velveta "cheese" just because of it's meltability and no flour nor butter (unnecessary cals. I use crema, it tastes better and spreads over nachos very nicely. Instead of avocados, I whipped up a small batch of guacamole. No sauces for me, just jalapenos slices all over. If you want more heat add more peppers.

Missing: a dash of chili. I tried this recipe yesterday for our neighbors. They loved it. I made it a bit more spicy for them and I used Buffalo meat instead. The children enjoyed it as well. My daughter said that it was too spicy and that it could probably burn off a birthmark. haha. I try to be hip and innovative with these recipes. We learned to eat spicier and more daring ingredients from our time spent in Phoenix, AZ. Sometimes my crazy recipes require medical attention afterwards. :-

Made this last night for mom's day had a party of 6 doubled the recipe & it made more than enough i made it with 3 pounds of meat. I also used ground chuck instead of ground sirloin. the salsa that it made was great! when you make the salsa chop the onions and toms. small. they didn't have any sm. onions so i just used one BIG one which worked fine although this recipe has 2 jalapenio peppers it's not very hot. the cheese sauce that i made was good i would leave the flour out though because it made the sause a lil grainy. you need to make the cheese sauce last because when it cools it's not as good. when you make the meat you need to be sure to have a BIG pan to make it, i made mine in 2 pans the directions aren't to clear on what to do with the meat everyoe probally know's this but i didn't. brown the meat & put the onions and such with it then fully cook the meat & drain the grease THEN put in the spices that was something i got confused on. also this took me 3.5 hrs to make

I made this cheese sauce with the pepper jack and milk and it completely fell apart (seperated. It got cold before pouring over the whole dish and reheating it made it garbage. Don't recommend this kind of cheese at all.

Everything was good but the cheese sauce and i would not put the chips on the bottom. Soggy chips on nachos is not good! I put them the edge for decoration and put the rest on the side.

The ground beef mixture is really yummy. I made individual portions so I didn't have any problems with soggy chips. My three star rating is because of the cheese sauce. I liked the flavor of it just fine, it was the consistency that was so weird. The texture was grainy and it was runny. It was a major turn off for me as it is the main star, to me, in nachos. My family liked the recipe, but if I were you look for a better cheese sauce recipe. After reading reviews, I wasn't the only one who ran into that problem with the cheese sauce.

These nachos were so good! The pick de gallo was simple, and tasted so great. For my family this made a lot of leftovers. I loved every bite....even reheated.

I opted not to make the cheese sauce, instead I sprinkled some shredded cheddar on the chips and nuked it for 20-30 seconds. No complaints!

    Thanks Rachel!!

This is my new go-to Nacho recipe. I did modify some by buying the Pico de Gallo Salsa from the Deli counter at my local grocery store. Instead of using the jalepeno, salt, chili powder, and cumin for the beef topping, I used a package of my favorite Taco seasoning. I also added a pinch of salt to the cheese sauce, which made the sauce outstanding!! I agree, it was a bit bland before adding a pinch of salt. I would highly recommend to plate individually, to avoid soggy chips. This also made it easy to have left overs later on!

Liked all the yummy toppings, but I agree with the other posters that the cheese sauce is not a win.

Very, very good! I'm slow in the kitchen, so it took me longer than the 30 minutes to prepare. Everyone loved it. The leftovers were as good, if not better than the first time. I didn't put everything on the nachos so they wouldn't get soggy. When we ran out of chips, we used soft taco shells...still very good.
