Great side dish. It would be better to bake the sweet potatoes instead of boiling them. It would prevent over cooking.

I followed the suggestion of roasting the potato's and the final dish was great. I used a champagne vinegar, since I had an open bottle handy. This is a very healthy recipe, (except for the bacon that doesn't taste healthy. Going in the keeper file in my house. I didn't add any more EVOO at the end.

I eliminated a couple of steps by roasting the sweet potatoes, drizzled w/olive oil, sprinkled with salt, pepper & smoked paprika, in a preheated 450 degree oven for 20 minutes. In another pan, lined with parchment paper, I cooked the bacon alongside the potatoes. You have to keep an eye on the bacon for desired crispness but they were both done about the same time. While bacon & potatoes were roasting, I prepared the rest of the dish. Got rave reviews and requests for the recipe....

I assume this was my fault, but I followed the recipe and the potatoes turned to mush as I stirred in the other ingredients. I think the flavor would have been good. Are the sweet potatoes supposed to be slightly crunchy? My guests really liked it, but I am not a fan.

My family loved this salad. They kept raving about it through our meal. We have given up regular potatoes and now only eat sweet potatoes. I am always looking for new recipes for sweet potatoes and this was an easy and delicious recipe!

This was not a good choice. The red onion plus the beef broth take away from the sweetness of the sweet patato. Rachael usually comes up with good ones, this is not one in my book.

It's a very simple and super easy way to dress the sweet potatoes, my family love it.
