Just got done eating the leftovers of this for lunch and it was soooo good!! My husband loves Mexican food, so I have been trying to make more of it. This recipe definitely topped the charts. So easy, fast and delicious. We have had this once a week for the past 6 weeks (it's just that good. We have made it with and without a few of the ingredients, but I would say it's best when you do follow the recipe. The one exception being we just tried using multigrain tortillas and it gave the dish a lot more depth. I recommend this recipe to everyone!

My family enjoyed this meal and it wasn't hard to make. I don't care much for eggs, but I made them along with it and everyone ate it up. Try to crisp the tortillas as much as possible, so they won't get too soggy. Will make again!

This is DELICIOUS!!! Also, very easy to throw together. Initially, I did not want to add the egg because it looked so good with out it and I thought it would be too rich. ADD THE EGG! It complimented the spice so nicely. I made mine over easy. I will definitely pass this recipe on to my family and friends and make it more often, especially for casual dinner/get togethers. Thanks Rachael!
