    I loved the flavor combination in this recipe! I am not usually a fan of typical carrot salad made with mayo. This version with an EVOO-based dressing was soooo much better, and the hazelnuts and raisins (or currants and sweetness and a yummy toasted flavor in the background. I played with the amounts a little bit...added a bit more EVOO and mustard, but overall, this recipe is a keeper as is. Thanks, Rachael! :o

    We bought a huge bag of carrots at Costco and were running out of things to do with them. This recipe was very tasty. My 2 small children ate it no problem. It was definitely something we have never had before, a good recipe to add to the repertoire.

    I loved the presentation of this! Its so pretty with the color. I made it the night before, and the salad tasted kind of bland. I think next time I will zip it up, but overall, with a little tweaking, its a keeper!
    Great for picnics, no refrigeration needed...

    I liked this salad and it was definately different. I added some cabbage like Rachel did on the show, but I think it would have been better without. The currents and hazelnuts were a great pairing, will make again.

    I thought this carrot salad was pretty good, the flavors were original and summery. However, this is not for everyone. The men in my family turned their noses up to it when I made it as a healthy side for burgers. I also thought it needed something sweeter so I added a sweet and syrupy balsamic vinegar to balance out the flavors.

    A simple way to use up the veggies in your fridge! The dressing is amazing. I added chopped fresh spinach, some scallions, and some celery to the salad and it came out great! I omitted the nuts, as I'm allergic, but I didn't feel like I missed anything.

    When this was made on tv, Rachel added red cabbage but its not in the recipe.
    I did add it and it was delicious. Also I added some honey to the dressing as I thought it was too bitter with just the dijon and olive oil.

    I happened to see the show and then downloaded the recipe which looked really good. Noticed the recipe was missing the red cabbage which I felt was an important part. I love cabbage.
