    this is one of the best soups I ever made. I am the only member of my family that is a vegetarian, but my family liked the soup so much, they didn't care it had no meat. the only bad thing was chopping the shallots, but the payoff was worth it.

    My husband and I enjoyed this soup and it was even tastier the following day! I added some light sour cream to my soup for a little creamier flavor. Delicious! Needed a little more salt than what Rachel called for. However, a very hearty meal that fills you up and it great for those who are looking for low-fat and heart healthy recipes! I'll definitely make this again!

    I made this soup for my boyfriend and me and it was great. I varied it a bit though. I added a handful or so of Italion Blend (romano and parmasean grated cheese. I served it with a cheddar biscuit. FABULOUS!! Thanks Again Racheal!!

    I made this soup this morning to use for lunches for the rest of the week. It's EXCELLENT and was very easy to prepare. I added three small stalks of celery from the heart, for a bit more 'crunch.' Will definitely be making this one again.

    This really does cook up fast and delicious. My husband made some fresh sourdough bread to go with it, and that was dinner! Great tasting!

    This soup makes a great base for adding beans, veggies, spices, whatever you want. I added garbanzo and black beans, which made it hardier and more filling.

    This was ok. Tasted allot like a thin tomato sauce with some spinach, which is not what I was looking for. The tomatos buried the spinach flavor. I will make with less tomatos and use chicken broth thickened with a bit of cornstarch next time to see if we like it better. That should bring out the flavor of the spinch more.
