    This recipe was just what I was looking for! Delicious. I had to use apple cider vinegar, and grape tomatoes instead of plum tomatoes, because that's all I has on hand, but all in all a very easy and flavorful salad. I'll be taking some to my mother in law... so you know it MUST be good!

    This could not be easier and it is delicious! I chopped it up smaller and did add lemon and lemon zest which added to the flavor. Did not have any fresh herbs but will try that next time just to compare. Today for leftovers I warmed up whole wheat pita bread and spread a couple TBS of hummus and spooned in the cucmber salad and, wow, it was delicious! My husband loved it so much he asked if we could have it on a weekly basis!

    For just a few ingredients with a big robust flavor I love this salad..It's true you do get bored eating the same mixed salads greens all the time. Sometimes you just want the toppings.. I find myself digging the bottom of the salad mix for the shredded carrots and red cabbage. This reminds me of a pickled salad.. I premade in advance and ate it 2 hrs later, wonderful flavor and crunch.

    I made and love this, I added fresh lemon juice and cilantro, it is sooo much better when it sits. You just cant get enough!!!

    What a wonderful way to use the seasons fresh tomatoes and cucumbers. There was nothing left! I did add some fresh basil since I have an abundance of that too.
