    Made this salad as a side for pork chops done on the grill. Very easy to make and a great summer salad.

    Made of dinner today since I had a leftover cucumber I did want to go south.Ony variation was fresh lemon zest and juice and red pepper flakes.

    I added mild banana peppers and dill and it was awesome. the tangyness of the peppers was a nice change and still very refreshing

    Both me and my husband are trying to eat healthier. With that, I try to incorporate a light salad to go with dinner nowadays. Greens salad can become boring overtime and therefore, I made this tomatoes & cucumber salad for a change. The recipe was very easy to make and the flavor was so light and tasting, we both loved it! Because it is just me and my husband in the house, I cut the recipe in half and I added a drizzle of honey to give it a little sweetness. I highly recommend it! Happy Eating & Enjoy!

    It's now become a staple salad for me. And my husband, who does not like tomatoes or cukes much, loves it too. I leave out the olive oil, and use more 1 Tsp salt and 2 Tsp red wine vinegar for the amounts stated in the recipe. It also keeps very well in the fridge for 3 or 4 days if I'm out of town or something. And it goes well with any meal. Very well done RR.

    The cucumber I used was pretty large, so I doubled the ingredients. I let it sit 30 minutes (at least and it was bland. I added a large clove of garlic, finely chopped, and extra red wine vinegar, salt, and pepper, and it was still just okay.
