    Rachael Ray's tomato ,Pepper and red Onion Salad is so fast and the taste is to die for. All the ingredients are usually in your kitchen and the flavour is light and summery. Calorie count is low and it makes a beautiful meal with a nice piece of grillled bass. Nancy<Ont.

    Quick, easy and refreshing. Great way to use those fresh summer veggies. For an added flair, I used the juice of one lime in place of the vinegar and added a handful of chopped cilantro... even more color and zest!

    This dish takes less than five minutes to make and is pretty tasty. It's great for when you've bought too many tomatoes and don't know what to do with them all. I seasoned the dish with salt and a pinch of sugar and it came out very nicely.

    Prepared this for my elderly mother and her elderly boyfriend who doesn't like onions, both in their early 80's. They both loved it all...my mother said it was very refreshing. For the peppers, I substituted a combination of red and green peppers as Rachel suggested. I also used Morton's lite salt.

    This is a good recipe for a picnic.....no mayo. I added some dried oregeno and past to stretch it and the additions made it a 5 star.

    Such a nice, simple recipe- works with other fresh summer veggies. Good suggestion to let the salad sit for a while so flavors develop. Also, be sure to add vinegar first.

    The family loved this when I tried it the first time, so I repeated it for a block party held with all the neighbors. I decided to make a TRIPLE batch and still there were NO leftovers. Easy, fast and looks BEAUTIFUL on the table. Stood out in a pretty bowl, and the recipe was requested by several of the attendees. THANKS for making my contribution a big hit!!
