I really like this recipe, it's easy to make and tastes great. I've found if I take the lemon juice, a little lemon zest, the evoo a pinch of salt & pepper and mix them together like a salad dressing and pour it over the tabbouleh it combines the flavors better for me. I also like to serve it with avocado slices/chunks and diced cucumber.

Since spring/summer have arrived, I've been looking for healthy salads to make and this one is good. The blend of flavors are great together as well as the texture. A healthy alternative to traditional salads.

Like the white bean salad, this recipe can be modify in so many ways. Versital and good tasting. You don't need to stuff it in a tomato. I will be using different veggies to expand the possibilities. Recommended....
