We loved this dish. So great flavors. I used fresh corn on the cob. Also I crumbled the tortillas in each bowl. I will make this again! Thanks Rach!

Great taste with some changes. I subbed: Hunts Diced Tomatoes Garlic Basil Onion, Rotel Original, chicken base made broth, diced Sam's Mesquite Grilled Chicken Breasts Frozen, 1 1/2 t powdered garlic. I deleted: chipotles, tomato sauce. I added: extra zuchinni, rinsed black beans, two charred/peeled/seeded poblanos, extra cumin. As I prepped the ingredients, I added them to a stock pot, brought to a boil, then simmered 6 hours. No magic for the time, just time to eat. I didn't use the toppings. More a stew cosistency. Glad we have two nights of leftovers. Killer basic recipe.

It was so simple and easy to make. Instead of doing ears of corn, I used a can of corn, which browned nicely in the pan. It was a tad spicy, but I love it like that. I also added half a can of black beans. I was amazed at how flavorful and delicious it was! I highly recommend making this!!!
Oh, and one more thing, I didn't use any sour cream nor did I use tomato sauce. Instead I used a small can of tomato paste, and only half the amount of paste in that. Not purposely, I just accidently grabbed paste instead of sauce, but it came out perfect!

This soup was delicious. My husband and I felt like we were eating in a restaurant! The only thing I did different was I added a can of Mexican Corn instead of the fresh cobs. Can't wait to make this again. Kids thought it was scrumptious too!

I watched Rachael make a similar soup by the same name I thought....similar items in it or I just adjusted the recipe but it was fantastic.
I omitted the zuke & added half the corn off the cob and then sliced the corn cobs to be circular and about an inch thick which adds charm and looks like a garnish. I also put the blue corn chips in the bottom of the bowl w/ a few spilling over the side before adding the soup to the bowl.
I found the soup to be awful thin when extremely hot but again the taste was awesome!
If ur looking to switch up your Mex menu def. give this a try either before ur main course or as your main course. No garnish is needed and the corn and blue chips add a great color and flair. Easy to make & Easy to modify; thats what I luv about Rachael Ray :

I loved this soup and apparantly so did all my guests as everyone has requested it. I modified this a bit because I had a friend who is vegan. I changed the corn to frozen kernels (did not have a grill pan so just broiled in oven, the chicken stock to veggie stock and also added a can of black beans. It was delicious. I had the chicken on the side that my guests could add with all of the garnishes. I can't wait to try it with the chicken broth and chicken added next time. Thank you Rachel for such an easy and flavorful recipe.
