I loved the Tuna and Artichoke recipe. I didn't stuff tomatoes with it...instead, I served it as a salad on leaves of crisp lettuce. It is light...great combinations of flavors and textures - a perfect summer dish. I also made the Stuffed Zucchini recipe. It was super easy to make and delicious - just the right amount of tang from the feta cheese. It also made a nice dip for vegetables and it kept well in the fridge for a couple of days so I had a nice healthy snack at night rather than grabbing a bag of chips! I would encourage everyone to try these recipes...they wonderful!

I made these apples as a Mother's Day desert, and they were delicious! Mom even said "well isn't that fancy?" Impressing an Italian mother who's cooked her whole life... priceless :

A couple of years ago my 9 year and myself tried this recipe and it turned out great. My parents came in from out of town and they loved it too. Very easy, tasty and quick desert recipe.

I really liked the idea of it but I found it to be entirely too time consuming.

I also made the tuna salad and substituted roasted chicken and added a little olive oil.
