It looked so good while Rachel was preparing it, but I hated it. The taste was bitter and overall, awful. I ended up throwing the remaining away!!

As I said, these recipes taste wonderful, are easy to make and the tomatoes and zucchini are healthy to boot. Thanks!

I only had the stuffed apples and they were really good. I will probably have them again.

I only tried the stuffed tomatoes, and with some slight modifications for my own food tastes, it was a simple and very flavorful meal. I used chicken instead of tuna, and added a few extra cut up vegetables that I needed to use up. The lemon juice tied the mixture together and it was very figure friendly. I have sent this recipe to my family to try.

I used the stuffed tomato recipe for a tuna salad on an almost unbearably hot day to a potluck dinner/study group. People raved about how good it was and my husband ate it for 3 meals in two days. (There was a lot leftover because I made a double batch and then everyone brought a main dish that night LOL

Best tuna salad I have ever tasted.

Delicious but stuffed zucchini was a bit salty, I guess because of the Feta Cheese.

I only made the Red Pepper/Feta/Chick Pea dip and used with tortillas as a snack. The food processor is necssary for the smooth consistency. I don't have one (yet so struggled between blender and mixer. Even with a few "bumbs" everyone loved it, even those skeptics about hummus...
