We made the feta and chick pea spread recently and really enjoyed it. We followed the directions except adding slightly less feta than called for. It was so easy I will probably make it again but I will not use as much red pepper as the recipe called for. We did not use it on zucchini but on a tortilla and wrapped it with spinach leaves. Couldn't have been more simple!

I made this for my family and they loved it! Especially after a hot day, it was so nice to cool down with such a refreshing meal!
My mother is a vegetarian, so instead of tuna, I just used more feta cheese and it was great!

I enjoyed making this meal to impress my husband it was quick, easy, and tasty too. I would suggest this to anyone to try at least once if not every picnic.

I really enjoyed the tuna and artichoke stuffed tomatoes. It was a great change from the traditional mayo based tuna salads. All the ingredients went together really quick and easy.

One of my few Rachael Ray total failures. No one liked it.

The zucchini stuffing was dry but had a decent flavor. The tomatoes were hard to eat, had a somewhat boring flavor, I also did some with canned chicken instead of tuna and this was the same.

Only tried the stuffed tomatoes. Good, but not my favorite Rachel Ray dish.
