I tried all three recipes-very easy to make. My husband and I loved the apples and the stuffed tomatoes. We weren't too crazy about the stuffed zucchini.

These stuffed tomatoes were very easy to make and would be great for a picnic. They are very flavorful and healthy. They remind of a light lunch that might be served at a spa!

Tuna salad had been a favorite stand-by, but this recipe brings new life and great taste!

I tried all 3 recipes, and particularly loved the tuna salad. It was refreshingly light (no mayo!, and the lemon zest gave it delicious fresh taste.

This was a wonderful menu, the red pepper feta chick pea dip is wonderful with crackers and people think you spend a lot more time on it than you did.
