I tried all three recipes-very easy to make. My husband and I loved the apples and the stuffed tomatoes. We weren't too crazy about the stuffed zucchini.

These stuffed tomatoes were very easy to make and would be great for a picnic. They are very flavorful and healthy. They remind of a light lunch that might be served at a spa!

This was a wonderful menu, the red pepper feta chick pea dip is wonderful with crackers and people think you spend a lot more time on it than you did.

It is a great summer recipe with the added benefit of being low cal,heart & diabetic healthy eating, plus the added benefit of being yummy.
