The chili is very easy to make, but my corn cake toppers were quite stubborn. After several attempts to pan fry the toppers, I just made corn breads in a cast iron skillet in the oven instead. I added jalapenos to the mix. Delicious!

Delicious chili recipe!
The real 'gem' of this recipe are the corn cake toppers...wow! I use these on all types of chili and soups I make. Such a fun idea. Thanks Rachael!

I LOVED this recipe, and so did everyone in my house! I made a few changes: 1/2 the chicken stock, 4 adobo chiles, and TONS more chili powder, plus I added corn, a yellow pepper, and an orange pepper. This will be my go-to chili recipe from now on!

This recipe couldn't be any easier. My family loves it! I don't make the corn cake toppers, I just make corn bread in the oven instead. I also use chipotle salsa instead of peppers. Requires even less work ;

Though it's more watery than your standard chili, it is absolutely delish! During the winter this is a major staple in our house, and you can't beat the corn cake toppers!!!! I add a fresh jalapeno to my corn cake batter just 'cause we like a little more heat in our house. It's so good I'm making it tonight even though it's still hot out.

I made this for dinner this evening and it turned out pretty good, although I will admit I made a few adjustments. First, I used 3 lbs of turkey instead of mostly because my grocery store didn't have a 2 lb package and some of the reviews said that it was too thin. Second, I added in some cumin with the chili powder to give it a slightly smokey flavor. Third, I finished it with a little fresh chopped cilantro. And lastly I used mild cheddar cheese in the corn cakes because I like the combo of the slightly sweet corn cake with the spicy chili. I will admit that the corn cakes were a little difficult to makes and I agree with previous reviews that you need to cook them on a lower temp. I would make this again.

I am a new diabetic and with aa few minor alterations (lowfat chicken broth, etc. this is a great way for me to still have chili. Thanks alot!
I too add less liquids and cook it in the slow cooker.
