    I read some of the reviews before making this and decided to add a few tablespoons of tomato paste. The chili was nice and thick and tasted great. My husband liked it as well. We didn't care for the cornbread toppers. I didn't have any Mexican beer so I used what was in the fridge from the last gathering at our house. The leftovers were as good as when first made. I will make this again.

    I was surprised I like this one as well as I did.
    Next time I will reduce the amount of tomatoes to a half of a 28 oz can. But the flavor was so great.
    I did use black beans instead of kidney beans.
    We use black beans with southwestern type of food more than we would kidney beans in our house.
    It was a great choice for our first cold snap!

    add 1 can of chipotle peppers for even more spice! just adding 2 wasn't spicy enough for me. great flavor otherwise

    It was a good and easy recipe and the Jack cheese corn cakes were awesome. I made a second pot of the chilli the next day and added less chicken stock to make it a little thicker and added about 5 chipotle peppers and I added pepper jack cheese right into the chilli and it thicken just the way we love it. Rachel this is a good cause you can add whatever you want. Next time I will add a dab of chocolate shaving for that hummmm factor. Loved it.

    this chili is the best--BUT it doesn't take 30 minutes! we cook it down for about 2 hours before it's perfect. we also add corn and substitute black beans for half of the kidney beans.

    The flavors were good; however, like many reviewers before the liquid was very thin. First of all I used Fire Roasted tomatoes for that "roasted" flavor(which of course did not change the thickness of the liquid. Then to make it more chili like, I added 2 tablespoons or so of tomato paste. That made it perfect. The corn cakes were a great addition!

    It is easy, however I was glad I read the reviews and put 1/3 of the liquid, otherwise it would have been too runny.
