    and wasn't too thrilled about it. It tasted very bland to me...maybe it would have been better with ground beef??

    This chili is perfect for any night of the week! It's a one pot wonder and very simple to make! I made it for the leftover guests of my daughter's bday party and I'm glad that I did! It makes a ton of food, and there would have been no way that hubby and I could have eaten it all by ourselves! I love the chipotle in adobo! Who would have thought that just 2 or 3 of those puppies would add such heat to the chili! Will definately make again when entertaining! You rock Rachael !

    I really enjoyed this recipe. It was quick and easy to make. The corn cakes definetely need a little more added to them - maybe some chili powder or hot sauce? Also, the chili was a little too soupy for me. I added about 2 tablespoons of mesa flour and then it was great!

    I loved this recipe. After reading about it being too liquidy, I left out the chicken broth. I added some cilantro,corn, lime juice, and liquid smoke. It was the best chili we have had in a long time. I burned the corn cakes, but they were still good. I added some corn to the mix. Very good.

    This is the best chili I have ever tasted! The chipotle chili's and adobo sauce add so much flavor to the chili! I did give it a 4 out of 5 however because it was a little watery. I mixed about 2 Tbsp's of flour with 1/2 cup of hot water and added that to the pot and it was perfect!!! This is a must try if you like chili!

    I almost gave it a 5. The chili was a great healthier variation of chili (definitely not my absolute favorite, but perfect for a week night when you are trying to eat semi-healthy! Beware the chipotles / adobo are very spicy. My husband and I really like spicy food so I put 3 in and it was pretty hot, but definitely still edible. I also read the previous reviews and cut the liquid (I used about a 1/2 cup of beer, and 1/2 cup of chicken stock...the consistency was perfect. The corn cakes were great...I added some frozen corn too. Don't skimp on the cheese, and definitely get monterey jack with jalepeno peppers as the recipes says.

    I am very sorry that I didn't read the reviews before I made this, but I tend to avoid them because of all the foolish people that just don't like Rachael. I am sorry to say that this recipe was terrible! It was much too watery, as most have said. It really was more of a soup than a good chili. For goodness sake, I adore Rachael, but why on earth must she add chicken stock to every single thing she makes? This would be better without that included, and with a few other changes, I think. I will just look for a better recipe next time, since most of hers are just filler for a tv show idea and never really tested out or very good. I give up! Like my husband and kids say, she makes good tv, but not good food!
