What a great way to use up all my Thanksgiving leftovers -- and super fast on back-to-work evening. I love the change of flavors from the "traditional" leftovers I've been having all weekend.

Look for fire-roasted crushed tomatoes -- they give an extra hint of smokey flavor and don't have the acidic tang of regular crushed tomatoes. makes for a richer chili!

I found the recipe easy to make. I had to double the recipe because I have a teenage football player and a husband who loves to eat. The recipe was a little spicy for my little one so added a little cheese, sour cream and cooked up some tortilla strips. It instantly turned into the best tasting tortilla soup. Thanks Rachael , it was delicious. I watch your show everyday but this was the first time I ever tried one of the recipes. It took me a little longer than 30 minutes, since I'm not a big fan of cooking but I think I will now.
